Blue Hubbard


Sis. Turman gave us this huge Blue Hubbard squash. Quite frankly, it's so big we're just not sure how to start with this thing. The other day I set it on the table and asked Josh what we should do with it. He said, "I know!", ran upstairs and came down with his toy tool box. He said, "I can fix it!" and proceeded to hammer away.
It's still not fixed. Does anyone have any good ideas for this ginormous squash?

Oh my gosh! That thing is H.U.G.E. Seriously. I have no idea about dealing with the size...but once I had it cut into peices? I would definitely be ROASTING that baby. (but you know how I love a roasted veggie!)

I should clarify with some directions: cut into one inch cubes, toss in a drizzle of olive oil, sprinkle with kosher salt, and roast in a 450° oven for 45-55 minutes. Yum!

I eventually cut that thing open with a hack saw. It was about 4-5 inches of squash before I got to seeds. Sis. Turman says she just uses an axe.
